For many years James Chatto and his wife, Wendy Martin, made their home in the remote village of Loutses, an olive-farming community in the north-east of Corfu.. The chapters follow the framework of landscape: the hills and sea, the olive groves and vineyards, orchards and vegetable gardens where the villagers hunt and grow their food. Over the centuries culinary influences from all over the Mediterranean have been absorbed and freely adapted to suit the extraordinary variety of produce that grows on this beautiful and very fertile island. This is a beautifully written book that explains the cultural and historical significance behind every ingredient and dish. Delicious recipes include artichokes in egg and lemon sauce, grilled wild duck and honey doughnuts.
John Tovey's A Feast of Vegetables was first published in 1985. He was proprietor of the famous Miller Howe hotel in Windemere, The Lake District, where vegetables - immaculately and imaginatively cooked - were always given pride of place. Much appreciated by Miller Howe's guests, vegetables were never regarded as an afterthought to the dishes they accompanied. A Feast of Vegetables is an easily-consulted alphabet of 200 recipes for all kinds of vegetables - starters, accompaniments and main courses, from cabbage cooked in cider, and courgettes with marsala, to leeks in a cheese pastry, and spinach fried with chopped walnuts. The delicious, healthy soups are an especially rewarding source of inspiration. Rights clearances are under negotiation for the re-issuing of further titles in the series, including: The Foods and Wines of Spain, by Penelope Casas Tapas, by Penelope Casas Thai Cooking, by Jennifer Brenan Leaves from the Walnut Tree, by Ann and Franco Taruschio Bruschetta, by Ann and Frnco Taruschio Entertaining with Katie Stewart Feast Days, by Jennifer Patterson Fragrance of the Earth: Lebanese Home Cooking, by Nada Saleh Howard and Maschler on Food, by Elizabeth Jane Howard and Fay Maschler
